Food mince pies (makes 24) Ingredients for the pastry 360g ground almonds 40g flaked almonds 6 tbsp coconut oil 6 tbsp water 400g chopped dates (blitz them in a blender) mincemeat 3 apples, chopped 100g sultanas 100g raisins 100g dried cranberries 100g dried apricots Juice of 2 large oranges 2 tsp nutmeg 2 tsp ginger 2 tsp cinnamon Method Soak all the mincemeat ingredients in a pan for half an hour, then cook on a low heat for half an hour. For the pastry: mix all ingredients together and squeeze the sticky mixture to form a ball. Divide the mixture in two, for the base and the tops. Roll out the mixture between clingfilm, as it will be really sticky, then peel off the top layer of clingfilm and use a pastry cutter to cut circles. Heat the oven to 200C (180C fan, gas mark 6). Line a cupcake tin with individual pieces of greaseproof paper. Place the rounds in the tin and bake for eight minutes. While they are baking, roll out the remaining mixture between clingfilm and use a star-shaped cutter to make the tops. Take the pastry out of the oven and spoon in the fruit filling. Place the stars on top and bake for a further eight minutes at 180C (160C, gas mark 4). Leave to cool, then enjoy!
