Recipes Loaded spinach, tomato and mozzarella folded eggs Ingredients 5ml olive oil 3 medium eggs 1 small handful of spinach 4 cherry tomatoes, halved 75g fresh mozzarella, sliced SERVES 1 tsp dried oregano Salt and pepper Method 1 2 3 Add the olive oil to a frying pan over a medium-high heat. Crack the eggs into a small bowl and beat with a fork until smooth. Pour the eggs into the frying pan and cook for 3-4 minutes, gently folding the eggs and moving the uncooked mixture to the middle of the pan until its just set. 4 5 Top with the spinach, tomatoes and mozzarella and cook for 2-3 minutes. Slide the folded eggs onto a serving dish and season with salt, black pepper and the dried oregano. Serve.
