Recipes SERVES 2 10-minute teriyaki chicken Ingredients 5ml olive oil 1 tsp fresh ginger, 20ml light soy sauce peeled and chopped 1 red onion, finely chopped 5 baby corn, chopped red pepper, chopped 1 small handful of 3 garlic cloves, finely chopped broccoli florets Method 1 3 2 4 Set a pan over a medium heat, then add the olive oil, onion, garlic and ginger. Cook for 2 minutes until they begin to soften and brown. Add the chicken and cook for 2 minutes until sealed. 300g skinless chicken breast, chopped 250g pre-cooked microwave basmati rice 60ml teriyaki sauce Add the teriyaki and soy sauces, pepper, baby corn and green beans, reduce the heat and cook for a further 7-8 minutes, stirring regularly. Heat the basmati rice as per the packet instructions, then add to a serving dish with the teriyaki chicken. Serve.
